Highland beef from Domaine de Valnor, a robust and hardy breed originating in the Scottish highlands.
Since 2013, we have been working with G. Brönnimann, Domaine de Valnor, and have discovered a genuine convergence on which breeding method to use. We’re able, therefore, to buy about 20 Highland cattle per year.
This beef breed is appreciated in our restaurants and we regularly organize meetings, between our chefs and Mr Brönnimann, in order to bring our skills together and thus enrich our working environments through constructive exchanges which also benefit our clients.
