Organic Swiss sweet potatoes from the Farm at Lake Murten
Tropical in origin, this variety of sweet potato generally grows in hot and humid climates. It is, therefore, quite surprising to know that they are Swiss and organic!
Since 2017, the Krähenbühl family have been producing “Beauregard” sweet potatoes on the Murten farm in Greng (between the cantons of Vaud and Fribourg). 800 ares are reserved exclusively for Novae’s restaurants.
Low in carbohydrates, the skin and flesh of sweet potatoes contain beta-carotene, an excellent source of vitamin C.
For example, they can be eaten as mashed potatoes… yes, but how to prepare them?
Bake the sweet potatoes in their skin and wrapped in aluminum foil at 140° for 1 hour. Once unwrapped, cut them in half, scoop out the pulp and blend with butter, cream, and milk until smooth. Adjust seasonings to taste.
