“We ‘jar’ over 40 recipes,” says Vincent Berthet. “We like the idea that our clients can take away a bit of Novae with them for a treat at home, or wherever.”
Philippe Conan, also an Executive Chef, adds “We cook fresh, local, traceable, organic or labelled produce. Everything is in line with our values — quality and proximity, of course, but also sustainability. We work with suitable recipes for pasteurization so that the dishes keep for several days without the need of any additives. The feedback from our first customers is very pleasing!”
